Living in a caravan, we were forced into living a more simple, creative, resourceful lifestyle where you find so much joy in using everything you have. As a chef, I’ve seen firsthand how much good food goes to waste – and how easy it is to turn that around with a bit of creativity. Partnering with The Great Unwaste is a chance to help more people cook with what they’ve got, save money, and do something good for the planet – one meal at a time.

My main mission is to ensure consumers pick good tasting fruit, so they enjoy the whole fruit rather than waste some which they might not finish. Storing of fruit is key to ensuring it lasts for as long as it can, or ripens into perfection condition and not end up in the waste bin. These critical pieces of education both are important to helping reduce food waste.

I love leftovers and have always been aware of food wastage, especially the environmental impacts. There’s something special about pulling out a meal from the freezer that you’ve already loved eating before. If only my kids embraced them as much as I do!

We’re a Gold Coast family of four who love healthy eating and reducing food waste. Platter dinners give Ruby, our three-year-old, the independence and autonomy to choose what she eats without pressure. Serving food this way encourages her to try new foods and means leftovers can be saved instead of wasted.

After many years spent in kitchens witnessing waste going to landfill in the pursuit of perfection, I feel that we can play a huge role in inspiring people both at home and in hospitality. The producers and earth put so much effort into bringing goods to our kitchens, it’s our role to make the most of them in return.

Tackling food waste matters to me because every bit we save makes a difference—for our planet, our wallets, and our kids’ future. I love finding simple ways to reduce waste at home, showing others how doable it is, and teaching my kids mindful habits along the way.
