Leftover mashed potatoes? No big deal and lucky you! With a little creativity, you can reinvent them into mouth-watering dishes. Here are some easy and full of flavour ways to give those mashed potatoes a second life.

Potato Pancakes

Turn your leftover mashed potatoes into crispy potato pancakes. Mix the mash with an egg, flour, and some chopped herbs or cheese, then form into small patties and fry until golden and crispy. These savoury pancakes are perfect for breakfast, lunch, or as a side dish.

Tater topping

Leftover mashed potatoes are the perfect topping for a quick and easy shepherd’s pie or any baked dish, from casserole to mornay, that mash tops everything. Layer cooked mince and vegetables or any casserole in a baking dish, spread your mash over the top, and bake until the potato is golden and the filling is bubbling.
